    Week One Menu

    Monday: Peanut butter roll-ups/     glazed salmon & pasta

    Tuesday: broccoli & cheese soup w/ breadspaghetti & ground beef sauce

    Wednesday:  cottage cheese&fruit & crackers/teriyaki chicken rice bowl

    Thursday:   left-overs/ Taco’s

    Friday: Order In or Go Out night

    Saturday:  pancakes/ soup & sandwiches/ Dad’s night to cook

    Sunday:  //Fancy Dinner: we set a tablecloth, wine glasses, use all the appropriate cutlery and insist on proper table manners.  The kids love the candles, and juice in their wine goblets.  //  Lasagne & Caesar

    A new challenge…

    Hello Mommies, 

    My new challenge… or, er, maybe ongoing challenge is to make this site design and navigation better.  I know that it is difficult to find things right now.  Some simple instructions will help:

    • Recipes: click on the smallest category ie: “breakfast”, not “recipes”.  Clicking on “recipes” will give you all the recipes in the archive!! 
    • Other topics: click on the category, to the right of the screen. 
    • Search: to find a specific recipe just use the search form.

    Making the organization work the way I’d like it is proving a challenge, and I have been spending way too much time on this pooter of mine, trying to just do this one thing and then that doesn’t work, so I’ll just try that thing.  yadayadayada.

    Thank you for your patience ladies (& all recipe searchers).

    Glazed salmon & Pasta- Easy

    Even the kids liked this one:

    Ingredients:

    • 4 frozen salmon fillets
    • 2 cups broccoli
    • 4 cups cooked pasta (we like the rice pasta from Galloways)
    • misc. veggetables, cut up (I used some shredded carrot, onion, and half a red pepper.)
    • For Sauce:
    • 2 Tbsp brown sugar
    • 2 tsp cooking oil 
    • 2 tbsp soy sauce
    • 3 cloves garlic, minced
    • 1/4 c. water

    Instructions:

    1. Cook pasta according to directions. 
    2. Defrost and cut up salmon into chunks.  Toss into frying pan.
    3. Cook broccoli in microwave (a couple tablespoons of water & 6 minutes on high)
    4. Add vegetables to salmon, except broccoli.
    5. Add glaze ingredients to salmon & vegetables in pan.  (no need to combine separately)
    6. Cover 2-6 minutes, over med-low heat, stirring often.  Until salmon is done. 
    7. Add cooked broccoli, cooked pasta, to frying pan.  Serve hot!  Yummy!
    8. Serves 6

    S&S Cabbage Casserole

    I love this recipe as the cabbage sweetens the whole thing, and gives it a sweet and sour tang.  And the kids don’t usually mind the itty bitty bits of cabbage either.

    Ingredients:

    • 2 c shredded cabbage
    • 1 c shredded carrot
    • 1/2 c chopped onion
    • ground beef, scramble fried
    • 1 jar 7 vegetable pasta sauce
    • 2 c cooked rice

    Instructions:

    1. Mix it all together in 4 quart casserole dish.
    2. Cover and bake 1 hour, 350°F.

    How easy is that?  Add a salad, and voila: dinner!
