Week 2 Menu

December 24, 2007

Monday: Shrimp Surprise Spread & rice crackers; egg nog, mulled wine, apple cider, veggies & Onion dip; chips & Garlic Dip;Macaroni & Cheese for the kids! :)

Tuesday: Merry Christmas!! Brunch: Broccoli Cheese Quiche, bacon, fruit salad & cottage cheese, Banana Bread.

Dinner: turkey, mashed potatoes, gravy, 2 vegetables, 2 salads (hint: I make yummy salads to make this meal special, instead of the stuffing. I don’t plan on trying the rice stuffing recipes this year - maybe next!) Chocolate Cake - Megan’s birthday!

Wednesday: vegetable turkey wraps, Teriyaki turkey bowl.

Thursday: Tomato Soup w/ cheese & crackers; Sweet & Sour Sauce & Meal over rice

Friday: French Fry Scramble; Supper: eat out!!!

Saturday: hot dogs(just weiners) & FF; Supper: Macaroni & Cheese
Sunday: lunch: Homemade Pancakes, sausages, eggs; Supper: Daddy’s Famous Nachos

Garlic Dip

  • 8 oz cream cheese
  • 500 g sour cream
  • garlic, 3-5 cloves (the taste will get stronger by the hour - so take it easy!!!), crushed

Whip together, and serve!! My family’s favorite!

French Fry Scramble

The kids (& my - shhhhh) favorite!

  • leftover french fries, cooked 2 cups, chopped
  • leftover ground beef, or whatever meat is on hand, cooked
  • 4-6 eggs
  • bell peppers, broccoli, mushrooms, onions - approx. 2 cups, chopped
  • salt & pepper to taste
  1. In skillet, fry vegetables in a bit of margarine or olive oil or whatever you use, until light brown & soft.
  2. Add French Fries. Heat through. Push everything to the side of the pan.
  3. Crack eggs into pan, stir until scramble fried.
  4. Mix it all up, and serve hot - with ketchup! :)

Shrimp Surprise Spread

  • 2 cans, broken cocktail shrimp, drained
  • 8 oz (1 brick) cream cheese
  • 1/2 cup mayonnaise
  • 1 small jar seafood sauce
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1/2 tomato, chopped
  • 1 1/2 mozzarella, shredded
  • 2 scallions, chopped
  1. Prepare: mix together cream cheese & mayo;
  2. Layer in 9 x 13″ baking pan: cream cheese mix, seafood sauce, shrimp, chopped veggies, top with mozzarella
  3. Chill (mine doesn’t usually last long enough to get chilled!)
  4. Serve!!! yum, yum!

Onion dip

  • 500 g sour cream
  • 1 pkg onion soup mix (no name is gluten free, as of this post)

Combine, chill & serve with chips!!
